Discover New Sabah Cuisine at OITOM, Kota Kinabalu. Chef Raphael Lee presents two curated tasting menus inspired by the ingredients, traditions, and flavours of Sabah’s farms, forests, and seas. Reservations are recommended, with walk-ins welcome subject to availability.
“OITOM” means black in the Kadazan-Dusun language — our interpretation of tradition on a plate, where Sabah’s heritage, indigenous ingredients, and culinary stories come together through New Sabah Cuisine.OITOM, on the name
New Sabah Cuisine takes the region's culinary heritage and renders it with contemporary technique. The produce is harvested from the foot of Mount Kinabalu, the seafood is sustainable and comes from the waters of Borneo, and the rarer ingredients, buah kulim and Kundasang highland produce among them, are championed by chef-owner Raphael Lee, who is part Kadazan.
Everything is sourced within Sabah's micro-seasons, in direct partnership with the region's farmers, fishers and artisans. A few days at most separate harvest from plate.
